Making a good salad can be as easy as slicing up fresh organic tomatoes, fresh mozzarella, and organic basil then drizzling with a little balsamic vinegar. It’s quick. It’s easy, and it’s delicious. You can even pop this combination between two pieces of good, whole-grain bread for a complete meal.
But sometimes it’s fun to go all out and make a really exuberant salad to serve either alone or to accompany a scrumptious soup. Start with a good foundation of crisp, fresh organic lettuce – hearts of romaine, radicchio, or mix in some rocket – whatever is your choice. Don’t turn your nose up at iceberg – its full-bodied crunchy texture and taste makes for a terrific salad base. From there you can add just about anything you want - celery, carrots, radishes, raisins, sunflower seeds, chopped walnuts, scallions, cucumbers, red peppers, hard-boiled eggs, ham, cheese... You name it – it’s your salad! Dress with one of our simple vinaigrette recipes or build your own for a fabulous yummy salad.
Use only organic produce and make sure it is washed first. Even organic produce may have been shipped and picked up a little dirt on the way. When you wash the greens, use clean, cold water and dry well. Use a salad spinner or dry between two clean towels. Store your produce in the refrigerator in a sealed plastic container and pop in a piece of dry paper towel to soak up any remaining moisture. Replace this paper towel with a dry piece when needed to keep your greens crisp and fresh.
